Mama Schnucki's PfefernÜsse for Christmas!

To celebrate, we've decided to share with you Mama Schnucki's FAVOURITE Christmas treat - PfefernÜsse (which translates to Pepper Nuts)! Making these at Christmas time is guaranteed to fill your house with the most delicious, festive aromas - enjoy!

 

PfefernÜsse

 

Ingredients

2 1/4 cups plain flour, sifted

1 1/2 tsp ground cinnamon

3/4 tsp ground black pepper

1/2 tsp crushed aniseed

1/4 tsp each ground allspice, ground nutmeg & ground ginger

pinch of ground cloves

1/4 tsp bicarb soda

125gm softened butter

3/4 cup brown sugar

60gm blackstrap molasses

1 egg

 

Icing

100gm pure icing sugar

pinch of each of ground nutmeg and ground cloves

 

Method

Combine flour, spices and bicarb soda and a large pinch of salt in a large bowl.

In a separate bowl, beat the butter and sugar until pale and fluffy. Add the molasses and the egg and beat until combined.

Add the flour mixture to the egg mixture and combine to form a dough.

Wrap the dough in cling-wrap and refrigerate for 2 hours (or overnight). This helps the delicious flavours to combine!

Preheat the oven to 160C (320F) and line backing trays with baking paper.

Roll tablespoons of dough into balls and place on trays.

Bake for approx 16-20 minutes or until they are firm to touch. Don't overcook them as they will harden after they are pulled out of the oven.

 

For the icing, combine the sugar, spices and 1 tbsp of water in a bowl. The icing shouldn't be too runny, thicker is better.

Dip the pfefernÜsse biscuits into the icing and set aside to dry.

You can keep these for up to 5 days if they are in a sealed, airtight container. They make perfect Christmas gifts too <3
